Whole black pepper

Ordinary people believe that black pepper is the mature version of the fruit of the pepper plant. It is not so. Whereas these peppercorns all come from berries that have reached their full size but are not quite ripe. These berries are therefore picked by hand and then dried in the sun without using electric desiccants. In addition, it is the enzymes contained in the berries that cause the skin to darken during the drying process. The later the berries are collected, the better their aroma will be as it becomes more pungent and bitter.
